The Winery


Cantina Fiorentino is located in the heart of Salento, between the rocky views of the Adriatic and the sandy expanses of the Ionian Sea.

It was founded in 2014 in Galatina, in Lecce province, incorporating the historic Cantina Valle Dell’Asso.

Cantina Fiorentino offers a wide range of organic Salento wines produced according to the most advanced principles of environmental sustainability. 

Led by Pierantonio Fiorentino, entrepreneur in the field of renewable energy and bio-sustainability, the company produces exclusively organic wines by committing to respect and safeguard its own environment, minimizing the consumption of fossil fuel through buildings and systems with very low energy consumption. 

Two offices of the winery located in Galatina, restored and modernized to achieve Pierantonio Fiorentino’s dream of applying energy knowledge to wine production. On one hand, the ancient Folonari factory – from where, in the early twentieth century, must and blended wines left for other Italian regions – whose restoration brought to light several tanks used for the vinification and aging phase. On the other hand, the historic building of Valle dell’Asso winery, dating back to 1920, whose acquisition, in 2017, multiplied by four the company area reaching 100 hectares of vineyards.
